Sapphire Gem®
This Czech breed is an excellent egg layer and a great forager. It does well in hot and cold climates and is a breed very close to the Old Andalusians. Please note that grey to light grey plumage is referred to as blue or lavender feathering in the chicken industry.
There are two breeds in the blue egg laying world currently accepted by the American Poultry Association — Araucanas and Ameraucanas.
Sapphire Olive Egger is a variety of Olive Egger chickens. The only difference between these birds of a feather is their appearance.
Secondly, Sapphire Olive Eggers lay green-colored eggs, while Sapphire Gems and Splash are brown egg layers. Thirdly, Sapphire Olive Eggers are a color variety of Olive Eggers, created by the hatchery. Gems are a cross of a Blue Plymouth Rock father and a Barred Plymouth Rock mother.

Popular breeds that lay colored eggs include Barred Rock, Rhode Island Red, Ameraucana and Welsummer chickens. Fun fact: You may be able to tell the shell color by the hen's earlobe. Hens with white earlobes typically lay white or lightly tinted eggs.
Grade AA: These are the highest grade with the most nutritional value. The whites of these eggs will be firm and thick and the yolks will be near perfectly round. These also have strong, oval-shaped shells. Grade A: These eggs are considered equal with Grade AA, but the whites of these eggs may be a little less firm.

Why are blue eggs more expensive?
Blue eggs generally will cost more because blue egg laying breeds are not only not as consistent layers as the leghorn, for example, that lays white eggs, but also because those breeds are larger and need to eat more feed in order to produce their eggs.
We've also seen people look at our brown and blue eggs and ask how they taste. Regardless of these common beliefs, the short answer is no. All chicken eggs are made the same on the inside.
The color of an egg shell has influence on people's buying choices. Some believe that brown, green, blue, or pink eggs are healthier than white chicken eggs. The truth is, there is no nutritional difference between colorful chicken eggs and white chicken eggs.
Laying season is Mid-February Through December
Olive Eggers are an exciting breed of chickens that typically lay various shades of olive colored eggs. They are created by crossing a dark brown egg layer with a blue egg layer.
Origin: Olive Egger chickens are not a breed, per se, but a cross of two breeds — usually a blue egg layer and a dark brown egg layer. For example, when an Ameraucana hen's egg is fertilized by a Marans rooster, the resulting chick will be an Olive Egger who will lay olive green eggs.

Blue Sapphires
Color has the greatest influence on a sapphire's value, and preferred sapphires have strong to vivid color saturation. The most valued blue sapphires are velvety blue to violetish blue, in medium to medium-dark tones. Sapphires with these qualities command the highest prices per carat.
Kashmir Sapphire; Kashmir sapphires are widely considered to be the most valuable and desirable sapphires in the world. They are named after the region of Kashmir, where they were first discovered in 1881. Kashmir sapphires are known for their rich, velvety blue colour and their exceptional clarity.
What is the rarest sapphire color? The two rarest sapphire colors are Padparadscha and cornflower blue. The most prized sapphires are Kashmir sapphires of a bright, velvety blue from the mountains in India. The last Kashmir sapphire was mined in 1927.
Isa Brown Chickens
These hens can be expected to lay up to 300-350 eggs per year. That's almost one each day of the year. Many Isa Browns even start laying earlier than most other breeds. A good Isa Brown hen may start laying as soon as 16 weeks.
What chicken lays 300 eggs per year?
Ameraucanas & Easter Eggers
These breeds lay up to 300 eggs per year, and as a bonus, they're colorful. Ameraucanas lay bright blue eggs, and Easter Eggers can lay blue, green, cream, or even pink eggs. These breeds tend to be more flighty and frantic than other breeds, unless you handle them a lot as chicks.
Australorps. Australorps chickens are among the top producers of eggs. They were bred specifically for egg production and can lay between 250 and 300 medium-colored eggs per year. An Australorp hen lays 364 eggs in a calendar year without additional lighting in Australia.
Marans are best known for their beautiful, dark brown eggs — the darkest brown of any chicken egg. Those that want a colorful egg basket usually seek out this breed. The Marans breed was developed in the late 1800s in the port town of Marans, France. These are calm birds that adapt to confinement well.
Cream/Pinkish Eggs
Light Sussex, Mottled Javas, Australorps, Buff Orpingtons, Silkies, and Faverolles all lay a pinkish-cream egg. As noted above, some Easter Eggers will also lay cream or pink eggs, while others will lay green or bluish eggs.
Friendly and curious, Super Blues are prolific layers of large, blue-tinted eggs, averaging five to six eggs a week, even during the heat of summer. Typically, Super Blue hens begin laying at 22-24 weeks of age. Bear in mind that they tend to be broody! On average, 15/16 pullets will lay blue eggs when they mature.
Among purebred brown egg layers, some of the largest eggs are produced by Jersey Giants and New Hampshires, both of which can be expected to lay large to extra-large eggs. Other layers of large brown eggs include the Delaware, Plymouth Rock, Rhode Island Red, Rhode Island White, and Sussex.
At most, a hen (female chicken) can lay one egg a day – but a hen will not always lay an egg every day. It takes 24 to 26 hours for a hen to produce an egg. See How a hen makes an egg?
Two Or More Eggs A Day? Chickens will sometimes release two yolks at the same time. This is most common with young hens who are maturing, or a sign that a bird is being overfed. Therefore, a chicken could potentially lay two eggs a day, but no more.
They are generally easy to handle and make great pets for both adults and children. They are also relatively low maintenance, as they do not require a lot of special care or attention. Despite their popularity, sapphire gem chickens are still quite rare and can be difficult to find.
Sapphire Gem's begin producing the large brown eggs between 18 and 24 weeks old, and they lay roughly four to five eggs per week. Like many hens, their production will begin to taper off once they are two years old. After this time, they will still lay eggs but there won't be as many.

Holland. Special Features: The Holland is the rarest American-bred chicken breed. It is a white-skinned, dual-purpose breed that is cold hardy and has the unique feature of being one of the only American-classed breeds that lays white eggs. The hens are good layers and will also make good broody mothers.
The Burmese bantam chicken is perhaps the rarest chicken. Sadly they have been teetering on the brink of extinction for several decades now. In fact at one point it was considered extinct. However in the 1970s a few birds were found in a very small flock.
Pink eggs are one of the rarest egg colors around! They are only laid by chickens that traditionally lay cream eggs.

The Sapphire Gem is a sex-linked chicken variety of chick, which means that their gender can be determined shortly after they hatch by observing their feathers' colors. Cross-breeding chickens cause this trait. Another important note about the bedazzling beauties is that they do not breed true.
While we eagerly watch for the first egg, it's important to know that the age in which a newly-matured hen will lay can vary greatly based on their breed. Some hens will begin laying eggs as early as 4 months of age while others may not reach maturity (i.e., laying eggs) until closer to 6 or 8 months of age.

These yolks come from chickens that are feeding on lots of dark red pepper or anatto seeds.
What chicken lays copper colored eggs?
They are also called French Black Copper Marans. James Bond was said to eat only Marans eggs. The breed was named Marans after the French town they come from, so even a single chicken is known as a Marans. Sometimes Black Copper Marans eggs come out a speckled color.
Egg Production
One great reason to consider Lavender Orpingtons is their eggs. Hens are moderate to heavy layers of large light brown, pink-tinted eggs. Average is about 200 eggs per year. They won't exactly out-lay a Leghorn, but their production is plenty for a small family.
